In dairy fermentation processes, maintaining tightly controlled conditions inside aseptic, pressurized vessels is essential for product consistency, culture performance, and food safety.
From filling to incubation, every phase depends on accurate, reliable measurement data to ensure process stability and repeatability.

Key instrumentation elements include:

  • Flow measurement ensures precise dosing of milk and ingredients into the fermentation vessel. Accurate volumetric control is critical for maintaining consistent batch composition and supporting downstream process control.
  • Level measurement in fermentation tanks can be a challenge. For pressurized tanks up to 3 m high the potentiometric sensor NSL is the ideal solution, in non-pressurized tanks the hydrostatic sensors like the L3 offer highly accurate level control.
  • Pressure monitoring at vessel inlets and outlets and differential pressure control in pressurized vessels enables continuous verification of process conditions. Immediate detection of deviations from defined pressure ranges helps identify issues such as blockages, valve malfunctions, or system leaks.
  • Temperature measurement plays a central role in fermentation control. High-accuracy sensors ensure that incubation temperatures remain within narrow tolerances, directly influencing culture activity, acidification rates, and final product quality.

Reliable measurement technology is essential to maintain product quality, ensure process efficiency, and guarantee safe operations in dairy processing.
